From time to time I crave roasted ducks or geese. You can usually buy them in any restaurant in the southern part of China, but they are also available in many restaurants in Shanghai, for example. In Hong Kong and Shenzhen there are special glass "cabins" where you can see hanging poultry and the cook preparing it. You can order one portion, the meat is cut with a cleaver along with the bones. Sometimes there is only baked skin and bones, other times there is more meat. Of course, the dish includes rice and fried leafy vegetables.
