The thing about rice fields is that they are wet and flooded with water. This, of course, attracts various creatures, e.g. the crayfish visible in the photo. Farmers also breed shrimp and small fish. This does not only apply to rice, because in China there are many plants that grow in water. Such a field becomes dual-functional, in addition to plants it provides other types of food. In the next photo you will see cooked crawfish.
